A word from Lars
The harvest is now finally over. 2011
was a small crop at Buitenverwachting,
but the qualities on red and white
varietals are very exciting. While the
winemaking processes continue in the
cellar, the viticultural planning for
2012 are in full swing.
We are implementing new pruning methods
and our former Riesling block is getting
prepared for new plantings in September.
Past experience proved to us that the
dark red and rich granite soils are
perfect for expressive Sauvignon Blanc. |

Chef/Patron Edgar Osojnik has introduced an
exciting new a la carte menu as well as Fine
Bites Tasting Menus for both lunch and
dinner.
• 4 course Fine Bites Tasting Menu: R250 with wine
matched to each course: add R75
• 7 course Fine Bites Tasting Menu: R365 with wine
matched to each course: add R125
(Dinner only - tasting glass of wine per

Saturday’s will see Saturday Roast Special starting at the beginning of April for lunch
only.
• Roast with Sauce, Potatoes and a Vegetable -
R99
• Soup of the day followed by the above - R149
The Saturday Specials will be served with an
Amuse Bouche (Edgar’s Amuse Bouche surprise is
renowned) and Petit Fours! Great Value!

Edgar emphasises that all beef served is
‘free range’; that chicken is pasture
reared (makes a big difference to the
taste); he uses organic vegetables
wherever possible.
He says “local products are lekker”.
The down to earth, humble approach to
gastronomy comes as a welcome surprise

Wine News ...
This month the focus is on Hermann Kirschbaum -
Cellar Master
Hermann how was the harvest?
“It was a good harvest enjoyed by all... well
most of the time. Everything went smoothly block
by block; all grapes predictably ripe as we
went. It’s not a big crop, similar to 2010. The
Red’s have come in very nicely with good sugars,
the Cabernet was perfect! The Merlot fantastic
and the Cabernet Franc is looking good. The
Sauvignon Blancs also look great with one block
showing exceptional quality. The harvest went
like clockwork; we didn’t have to make any
contingency plans, the weather also played
along.” |

He and Brad Paton work very well together and
the team is exceptional. He says that they are
happy that a lot of people enjoy the style of
wine that they produce.
This is a man who loves Buitenverwachting with a
passion! It comes from his gut which shows in
his commitment. He knows the many hectares of
vineyards like the back of his hand and has
enjoyed working at Buitenverwachting for 19 good
years. Hermann says that he would like to raise
a glass to all the loyal supporters.

• Monday to Friday from 10h00 to 17h00
• Saturday 10h00 to 15h00
We are not open on Sundays, we have a
comprehensive staff policy; the people that work
on the farm live in a beautiful village on the
farm and family life is encouraged.
Managing Director Lars Maack is of the
philosophy that it is very important for
families to have a day of leisure and/or worship
together. It works for us!
