Buitenverwachting will be sending out a regular

of the restaurant, updates on the wines, any new

happening at this entrancing estate. We will
start with a bit of background on the farm and

Some facts on Buitenverwachting
The farm was part of Simon van
der Stel’s original Constantia farm. In
1773 a 200 morgen portion was sub divided and
sold to Cornelus Brink; this was known as Nova
Constantia.
Buitenverwachting came into being
when Arend Brink bought the farm in 1794, built a
manor house and started planting vines. During
the past two centuries Buitenverwachting has had
no less than 16 owners with huge swings in
fortune. More on its colourful past soon.
When German businessman Richard Mueller
and his wife bought the farm in 1981,
stability and a change in fortune came to Buitenverwachting. The farm has been under the
management of son Lars Maack over the past few
years and this magnificent Estate has truly
flourished, producing outstanding wines and
comprising an excellent restaurant.

| Hot off the press ...
Brian Berkman’s Top 10 Cape Town Restaurants – 3
December 2009
“Buitenverwachting’s historic wine farm setting
is about the only thing
traditional here. Chef Edgar’s favourites are
items like springbok with
Christine (the estate’s flagship wine) jus and
other crowd pleasers while
other items hint at deconstructed or molecular
gastronomy associated with
The Fat Duck and El Bulli. Lamb prepared in
three different ways is
outstanding. (021 794 3522).”

The Chef
Edgar Osojnik came to South Africa to
see the country and work at the Grand
Roche for a short time ... two weeks
before he was due to return to start
work at a Michelin starred restaurant,
he met Yolanda, his future wife.
This was South Africa’s gain as he has
worked at Buitenverwachting for the past
10 years. In 2004 this extremely
talented Executive Chef was made a
partner in the Restaurant. With his
creative talent and his outstanding
training ability he has enriched the
local culinary scene in many ways.
The restaurant offers fine dining in a
contemporary, continental atmosphere
with a South African touch. Edgar calls
his cuisine Crossover Cooking with a
strong Asian influence incorporating
many different techniques; molecular
techniques are also used. He cooks from
his heart and nothing makes him happier
than satisfied guests.
Edgar says “I don’t settle for second
best, I only use the very best quality
obtainable.” It is no wonder then that
Edgar was Chef of the Year in 2003 and
Five Star Chef of the Year WINE Magazine
in 2005. |

In 2006 Brad Paton was experimenting in the
Cellar at Buiten and made a blend of Malbec and
Petit Verdot, “this tastes good and I am sure it
is going to be great, it will turn out
exquisite, like a rough diamond after
it’s polished” were
Brad’s thoughts... he cherished it in New French
Oak barrels for 34 months and when guru Lars Maack entered Rough Diamond in the Veritas
Awards wine competition he wondered if his
Diamond was ready? |
It was! Rough Diamond 2006 is the proud
recipient of a Double Gold Award in the 2009
